Our Story
Penang Shack started as a one-time fundraiser event to raise money for the Austin Justice Coalition by cooking food Nicolai grew up with from his family in Penang, Malaysia. It has now turned into a series of recurring pop-up events all around Austin.
We have some core dishes like our Curry Laksa and Satay that have become fan-favorites, as well as rotating items like our various ice cream flavors.
So follow along with us as we cook our way through Malaysian cuisine.

Nicolai
(Nasi Nico)
I’m a food photographer and freelance writer with a love for all things food. I cook and develop the recipes for Penang Shack, based on the ones that I grew up eating from my family back home in Penang, Malaysia. I also really like tiki shirts.
Don
(Durian Don)
I am a cookware marketer by day with an extensive background in the restaurant industry. I execute recipe development for our rotating ice cream flavors, help manage food prep + food safety, and can drink the most beer.
Mike
(Milo Mike)
My day job is Product Operations and so naturally I run and optimize our operations, processes, and website. I also cook and consistently drink more beer than Don. Oh! I also moonlight as a carpenter.
Sarah
(Sambal Sarah)
I’m a Product Manager by day and thrift store treasure hunter by night. I help run pickup logistics and flex in the kitchen where needed. Don may drink the most beer, but I’m the only one who can reach the bottom of a Pringles can, so who’s the real winner?
